Soy Bean Salad

Soy bean is very simply used for consuming as flour or else as a part of some north Indian main dishes.However, being a very high source of protein, it can be consumed as a tangy salad.

 

Directions

1 – Keep a cup of soy beans immersed in water for a night, and boil till soft after that. (Please note, if it is kept immersed in water for more than 6-7 hours in summers, it will probably get spoiled or attract fungus).

2 – Once the beans cool down, add your favorite raw vegetables to make it super fun!

Lettuce/Ice berg (seasonal)

Red/Yellow Bell Pepper

Boiled Corn (optional)

 

Toppings

For Vegetarians: Lightly saute 4 sliced mushrooms and a cup of sliced onions in Olive oil Add a pinch of Rock Salt and you are done!

For Non Vegetarians Small cup of Diced/Sliced Raw Chicken breast Saute the chicken pieces in olive oil. Add a dash of rock salt, oregano and black pepper.

 

Dressing

For a simple taste, add lemon juice, rock salt, black pepper, mixed Italian herbs and maybe a spoonful of olive oil. If market available dressing suits you, go for vinaigrette.

And sit back and enjoy the tasty protein rich salad.
